The Tara olive grove is located adjacent to the Riverina Highway half-way between Corowa and Howlong. Tara is one of three farms operated by Paul and Joan Trevethan and their family. ********************** Two varieties of olives were planted in 1997. The Manzanillos are prized as a table fruit but also yield oil that is flavoursome and fruity. The Nevadillos produce oil that is slightly stronger and has a distinctive spicy flavour. The olives are machine harvested in late autumn and immediately transported to Yarrawonga for processing with the use of cold pressed technology. Only the oil from the first pressing is retained; the remainder is discarded. Samples of oil are sent to an accredited laboratory for analysis to ensure compliance with international standards for extra virgin olive oil. ******************** In addition to the olives, our farms produce a range of winter cereals and oilseeds, prime lamb, mutton, wool, hay, forestry timbers and fish. We strive to farm in a manner that is environmentally responsible. On one property we have set aside over 250 hectares for replanting and regeneration of native grasses, shrubs and trees. Water from the fish operation is all retained on the farm and is recycled onto pastures, crops and horticulture. Our efforts in managing soils, water and vegetation through conservation farming have been recognised through the Bicentennial Conservation Farmer Award, the McKell Medal and an Order of Australia Medal. ****************** Enjoy the flavour of our oils simply with bread, with bread and dukkah, by drizzling it on salads or for the full range of your food preparation requirements.
